Butternut Squash Soup

This is the best squash soup ever! So easy and fairly quick to make.

What you need:

Saute the onion and garlic in a soup pot until soft and clear. Add the squash and the water or broth. Cook over medium to low heat untill the squash is VERY tender. Either use a mixer or transfer to a blender to puree the soup until it is creamy. Then add some salt (to taste) the peanut butter,a tablespoon of corriander and a good handful of finely chopped cilantro. Heat gently for a few minutes to melt the peanut butter and blend the flavors. You will not be disapointed in this soup, it is so yummy.
